Sauteed cabbage and fresh peas
This dish should serve 6 and takes around 45 minutes to make.
Preparation Time: 25 minutes
Cooking Time: 20 minutes
Ingredients
3 tablespoons vegetable oil1 medium onion chopped
about 1kg green cabbage quartered cored and cut into 2cm slices
900g fresh peas shelled or 300g frozen peas
one and half teaspoons salt
quarter teaspoon dried chilli flakes
1 tablspoon chopped fresh thyme or parsley.
Heat oil in a 5 litre flameproof casserole over medium heat. Add onion and cook, stirring occasionally for 5 minutes or until tender and golden.
Stir in cabbage, peas, salt, dried chilli flakes and 2 tablespoons water. Increase heat to high and cook, stirring frequently for 10-12 minutes until cabbage is tender-crisp. To serve sprinkle with thyme.
