Red Cabbage with Apples
This dish should serve 8 and takes around 40 minutes to make.
Preparation Time: 15 minutes
Cooking Time: 25 minutes
Ingredients
2 tablespoons olive oilabout 1kg red cabbage quartered cored and coarsely chopped
2 golden delicious apples peeled cored and chopped
1 tablespoon sugar
2 tablespoon red wine vinegar
2 teaspoons salt
chopped fresh parsley for garnish.
Heat oil in a 30cm frying pan over a high heat. Add cabbage and apples to pan; toss to coat. Stir in sugar, vinegar and salt.
Reduce heat to medium and cook stirring occasionally for about 20 minutes, until cabbage is tender. To serve sprinkle with parsley.
