60g coarse grained french mustard
60ml fresh lemon juice
1 tablespoon sugar
1 tablespoon rice vinegar
quarter teaspoon salt
quarter teaspoon coarsely ground black pepper
3 medium carrots
1 small head green cabbage about 500g quartered and cored.
MethodPrepare dressing: whisk mayonnaise, mustard, lemon juice, sugar, vinegar, salt and pepper together in small bowl. Peel and finely grate celeriac and carrots. Thinly slice cabbage, discard tough ribs. Cut cabbage into quarters using chefs knife. Cut and core. Place vegetables in a large bowl. Add dressing and toss to coat well. Cover and refrigerate for at least 90 minutes to allow flavours to blend.
