Asian Coleslaw

Ingredients
75ml rice vinegar2 tablespoons vegetable oil
2 teaspoons sesame oil
three quarters teaspoon salt
450g carrots grated
1 large head savoy cabbage about 1kg thinly sliced and tough ribs removed
4 spring onions thinly sliced
30g fresh coriander chopped.
Prepare vinaigrette: whisk rice vinegar, vegetable oil, sesame oil and salt together in a large bowl until blended.
Add carrots, cabbage, spring onions and coriander to vinaigrette and toss to mix well.
