Cabbage and Spinach Coleslaw
This dish should serve 12 and takes around 35 minutes to make.

Ingredients
1 medium head green cabbage about 900g1 medium head red cabbage about 900g
1 medium red onion
175g mayonnaise
60ml cider vinegar
2 tablespoons sugar
2 tablespoons dijon mustard
1 teaspoon salt
half teaspoon coarsely ground black pepper
150g spinach leaves.
Quarter, core and thinly slice both cabbages and discard tough ribs. Place cabbage in a large bowl. Cut red onion lengthways in half then cut each half crossways into paper thin slices. Add onion to cabbage.
Prepare dressing: whisk mayonnaise, cider vinegar, sugar, dijon mustard, salt, and coarsley ground black pepper together in a large bowl. Add dressing to cabbage mixture and toss to coat well. Cover bowl with cling film and refrigerate for at least 3 hours to allow flavours to blend.
Meanwhile, rinse spinach with cold water and pat dry with kitchen towels, tear into strips then wrap with cling film and refrigerate until ready to serve.
To serve, add julienned spinach to cabbage mixture and toss to mix well.

I tried this recipe and liked it. I was looking for things to cook in my new slow cooker and this came out fine. Had to add a little more chilli though as I like my food spicy.
