Ingredients1 medium head green cabbage about 900g
1 medium head red cabbage about 900g
1 medium red onion
60ml cider vinegar
2 tablespoons sugar
2 tablespoons dijon mustard
1 teaspoon salt
half teaspoon coarsely ground black pepper

Add onion to cabbage. Prepare dressing: whisk mayonnaise, cider vinegar, sugar, dijon mustard, salt, and coarsley ground black pepper together in a large bowl. Add dressing to cabbage mixture and toss to coat well. Cover bowl with cling film and refrigerate for at least 3 hours to allow flavours to blend. Meanwhile, rinse spinach with cold water and pat dry with kitchen towels, tear into strips then wrap with cling film and refrigerate until ready to serve. To serve, add julienned spinach to cabbage mixture and toss to mix well.
